American Idol is going to "suck" when Simon is gone!
I just had to voice my opinion because I just finished watching the show and he really does add some funny moments to the program. Now that that's off my chest I can go forward!
Today at work we were supposed to get a visit from some corporate "big shots" so I went out of my way to put makeup on, do my hair and even wear my name tag (I usually don't wear it just in case I might piss someone off and that it breaks my skin out. Only real gold or sterling silver will do for my skin!) and I'll be damned if they didn't show! I did get to consolidate today and enjoyed the interaction with everyone and they didn't mind that I was a little slow...it has been a while since I've worked that position, but I'll work anywhere!
My body is even more sore today than last night so I skipped my workout today to give my muscles a little rest and will return to do Zumba tomorrow night. Anna better be there!
Along with my working out I am trying to eat more healthy too. I only drink water (maybe a soda once a week, if that), switched my rice/pasta/bread to whole grain, eat more veggies and fruit and have tried, I said tried, to cut out sweets. Another big change I've made is to eat breakfast every morning (oatmeal, eggs or tuna) and eat something every few hours to keep my metabolism going. A lot of people think they must cut out meals and way back in order to lose weight but that's not true. We must eat to fuel our bodies but we must choose the proper foods and portions. I'm not trying to lose a bunch of weight but to get healthier, lower cholesterol and blood pressure and in the process I know some weight will come off. So, below I have given you a healthy, quick and easy recipe to add to your meal plans.
Tomato & Basil Linguine
Linguine (Whole Grain)
1 Lemon
4-6 cloves Garlic (chopped)
Basil (fresh and chopped)
1 Large Tomato (chopped)
Olive Oil to taste
Salt & Pepper to taste
Parmesan (shaved)
Cook the linguine per directions on the package (al dente is best). While the pasta is cooking chop the tomatoes, garlic and basil. Once the pasta is ready pour into bowl and add all the ingredients except cheese and toss. Plate and top with Parmesan.
Tips:
If you'd like to add a protein you can add shrimp or chicken. Just cook it separate and add with all the other ingredients and toss.
When you drain pasta, don't drain completely. Leave a little water for the flavor!
