Holy Guacamole!

Is it cold enough for everyone? Damn, even the folks living in Florida are having to wear coats! Getting into my car this morning was a slight challenge due to the doors being frozen shut and even my floor mat on the driver side was crispy, so much so, I had a hard time pressing the gas pedal!

My day was uneventful and a short work day. After work I headed out to the grocery store to stock-up on goodies for the cold, cold weekend. Since my son has grown and seems to just keep growing my grocery bill has increased by $50 plus. I feel like I buy enough food and then in only a few days it's all gone! This is the time I wish I had a girl. You know, most high school aged girls are so consumed with their body image that food is rarely eaten! Ha! Ha! Ha! So, I buy all this food and for the last several days my son has been eating fast food with his buddies before coming home. As soon as I stop buying as much or cooking for him he'll wonder when I'm making his next meal! Huh! That'll teach him to eat out!

I took my sweet Murphy to the dog park today with my friend Christa and her cute dog Zoe and we watched them run around and tried to keep them out of the muddy spots! It was cold and we were all bundled up as were some of the dogs. Two of the dogs had on sweaters and all I could think was what all the other dogs were going to say about them. Yes, I know it sounds cukie, but I like to imagine my dog does have a brain and talks to other dogs. Really, dogs do have a natural coat so why would you want to put a sweater on it and take the risk of it being made fun of by the others? Oh, wait a minute, that was me making fun of them! There was this one dog out there, a grey doberman, that was a huge weenie and would cower down as soon as any of the others would approach. Did I mention, he was one of the two with a sweater on! Murphy just finally left him alone and played with the others. Murphy may not have any "balls" but he's all MALE!

My husband had a dinner meeting and Kyle went to his girlfriends so I got to eat dinner alone so I made a taco salad. Below is my mother's recipe for Holy Guacamole, that I learned when I was a child. I had to do a "show and tell" in my 3rd grade class and I made this recipe and have been doing so ever since. I think it is the best I've ever tasted and hope you will too!


Holy Guacamole!

4-6 Large Avocados
1 Lemon
1 Tomato (chopped)
1 Onion (chopped)
Garlic Salt to taste
Salt to taste
Pepper to taste
Worcestershire Sauce to taste
Tabasco (if you want to add a little zip)

Take and slice avocados in half and remove the seed and then the meat from the skin with a spoon and put in bowl. Squeeze the lemon into bowl and then mash with a fork. Add the rest of the ingredients to taste and mix. Now you're ready for chips and deliciousness!

Tips: to choose ripe avocados you must feel each one and they should be firm, not hard or too mushy. If you won't be eating the guacamole right away you can throw a few of the seeds into the mixture, cover and refrigerate. This will help keep it from turning brown, but don't worry, if it should turn a slight brown just stir it and it's fine. Finally, if you want a little heat in it add several drops of the Tabasco. At my last party I served the guacamole in a huge martini glass, set in on a plate and surrounded it with colorful tortilla chips. It was a huge hit and you'll say "Holy Guacamole!"
